Cooking Bacon

I have recently found such an easier way to cooking bacon. Most of the time, I have put it in a skillet and let it cook until desired like-ness.

Now I cook the bacon in the oven. I place a piece of aluminum foil on a cookie sheet. Place all desired amount of bacon on sheet. Pre-heat oven to 400 degrees. Cook for 12-14 minutes.

I have noticed that the bacon you get from the store will cook well at the previous degrees, but if you get fresh bacon from a meat place the temperature does change.  The fresh bacon, I’ve noticed, cooks better at 425 degrees for 12-15 minutes (depending on the thickness of the bacon). I do cook mine a little longer than the rest of the family. I like mine extremely crunchy.

Just sharing in case you have not thought of cooking bacon this way.



What’s Been Going On?

Well it surely has been sometime since I had really posted much here. My last post from last year was on September 15th. 7 months…. YES, 7 months since my last post. That is crazy, but my life has also been crazy busy.

So… what has happened since that last post. Well…. let me fill you in.

  • We celebrated 4 birthdays
  • We officially got married
  • Celebrated holidays ( A lot of firsts for our littlest guy)
  • Celebrated 12 years together
  • Dealt with a lot of different sickness  from all of us
  • Dealt with the passing of a family member
  • Starting a New Year

There has been so much going on with us, that time seems to go by so fast. I cannot promise that I will be able to post here a lot. We have just under 2 months of school left. Meaning that it is going to be a very busy Summer with all 3 kiddos. So, I want to try at least to post once a week. I think that is a good start.

With that being said, I am looking forwards to seeing you here next week. Have a great weekend!!



First Birthday!!

On April 3rd, we celebrated our little man’s 1st birthday!! I cannot believe that the first year has gone by so fast.

I cannot believe that you are growing up so fast. I am so glad that you are a part of our family. You fit in perfectly. You have been learning so many new things and I enjoy getting the chance to watch you learn them. I know there is so much more on the horizon that you will achieve. You will reach all of them. Just remember to take your time with them.

I am also so excited to see the little man you will turn into. I love you more than words can say and you are wonderful no matter what. I send you all of my love.



Homemade Baby Wipes

For those who know me, I am one who will try to do anything to save money. I am not a big money spender. I rather do everything in a cheaper way or form.

When I came across the idea to make my own baby wipes, I was so down with it. honestly it is a very easy process and it does not take a lot of materials. Most of the items you will need are probably already in your house.

A Sad Goodbye!!

This is one of those blog posts that you hope you will never have to write. Although it is one I did not want to write, I felt that I had to.

On Tuesday, June 9th, we lost a lady in our neighborhood. This was a total shock and completely unexpected. We all had seen her many times throughout the day on Tuesday.  The last  time anyone saw her was around 5pm. The last person she talked to was the Mister’s dad. They were at her house chatting and petting the cats. So somewhere after 5pm and before 7pm, she has passed away.

As I had mentioned before, this was a complete and total shock. It really had hit me hard. I have known this lady for the last 8 1/2 years. I think it was so hard to handle because my two older children just adored her. I had no idea how I was going to tell an 8 1/2  and 4-year-old about this. Kathy had adopted our older two children as her grandchildren. I know my kids adopted her as their grandmother. I could not stand the idea of breaking their little hearts, but I also did not want to lie to them.
